Sunday: Day of Recovery

Started Sunday with a banana and tea, followed by a 5.3 mile run, which turned out to be a great run!! It definitely helped with recovery. Breakfast was baked apple oatmeal. Then I had a salad with cantaloupe and cottage cheese and vegetable and hummus stacked sandwich. Dinner was brown lentils with roasted taro, turnip, carrot, mushroom, and leek. Yum! I was SO FULL when I went to bed - and I couldn't even finish the lentils. A pack that cost us $.79 yielded about 6 cups of lentils. I think this will be our new staple! We have a lot of leftovers to eat this week, so they'll be making more appearances.
