Hot 2 Ways

Dinner tonight was a pork and hominy soup:



Soup:
  • 8 oz pork
  • 1 can diced tomatoes
  • 1/2 a green pepper
  • 1 can hominy
  • 1 can chicken broth (reduced sodium)
  • Some cornstarch for thickening (we didn't have tomato paste on hand)
  • Garlic
  • Some oil to brown the meat
Roughly 240 calories per serving for 4 servings. We divided by 3, so I had about 350 calories worth.

With a side of brown rice pizza crust (random, I know!)



We thought it was freezer burned and were going to throw it away but decided to pop it in the oven for 10 minutes to see what it was like. It was just OK. I hate about 2/3 of this slice and then gave the rest to the husband. Come to think of it, it was REALLY freezer burned!! Most likely from the storm that knocked out our power for six hours a few months ago.

No walking tonight; I'm taking the night off. And it's HOT HOT HOT out there - and a hot AND spicy soup didn't help!

I might have some watermelon later when my stomach calms down from the broth and water.

Total calories today: About 1750.
