Need More Sleep!

First off, thank you all for your wonderful comments! I'm so glad my meals are an inspiration : )

I slept horribly last night. Husband and frat brother came home late and woke up me. Then I was up for like 30 minutes "dealing" with the husband. I won't go into details, but let's just say he can't drink like he did in college anymore. Went back to bed, and woke up again at 3:30 and felt sick! I was still really full from all the chicken. I felt better after laying there for 5 minutes and went back to sleep, after resetting my alarm from 4:50 to 5:45.

So point of the story is that I didn't go to the gym. But I DID go running! I normally don't like to run 2 days in a row due to old injuries (plus, it's really hard on the joints and legs), but today I didn't have a choice because I have to be at work early. So I set out for a quick 3 miles.

When I got to my turn-around, I decided to go ahead and continue on the 4.2 mile loop. Aside from being STARVING the whole run despite a few bites of banana, I felt pretty good. It took me 38 minutes even, which is about a 9:15 mile.

I was thinking while I was running "I am crazy to be out here in the silent dark running at 6am." But then I thought that this is why sleeping America is obese and I'm not. I'm the normal one!

Breakfast today was another oatmeal pancake. It came out better today, thanks to cooking spray, but it's still quite dense and moist because of the heavy pumpkin. First-timers cooking this should probably omit the pumpkin and just have the oats, egg whites and spices until you get the method right, then try adding things.



I also had another great smoothie. I little smaller today, so I hope I get full enough off this breakfast!

Smoothie:
  • Banana (1/2 small)
  • 1/2 c frozen blueberries
  • 1/3 c frozen raspberries
  • 1/2 c plain yogurt
  • 1/2 c skim milk
  • 1 tbsp ground flax


Total breakfast calories: ~400

I had an oatmeal pancake today too! I also added pumpkin...it was yummy!

How many egg whites do y'all use? I want to make one, but the recipe on CK calls for EggBeaters and those things freak me out a little (Eggs...in a carton?).

1 real egg or 1/4 cup eggbeaters (30 calories). I get the 100% egg whites because I hate the 1% of powders/spices they put in EggBeaters (who wants onion powder for breakfast!?). The egg whites are much more neutral : )
