Here's how dinner turned out:
Started the evening with the wine, which we drank ALL of (I probably had about 9 oz worth of the bottle), or 3 of these:
Homemade pesto: (Throw all in food processor)
- A few big handfuls of basil from the garden
- 2 tsp EVOO
- 2 in. log of parmesan cheese, grated
- garlic clove
- A few spinach leaves
We cooked the pasta (sorry, no photos) and also chopped up about 8 mushrooms, 8 grape tomatoes, 1 clove of garlic and a big bunch of spinach. Added a few chopped olives for garnish.
And here's how it turned out!
As you can probably tell from the smell emerging from your computer, we are both fuming with garlic breath!! Ahhh! I'm dying of thirst from the salt, but this dinner was EXCELLENT!
After dinner we went for a 40-minute walk (I decided to take today off of formal exercise) and discussed our Thanksgiving menu! We're hoping to host our families here, and yes, we are already debating recipes!
Total dinner calories: ~360
Plus 9 oz wine (yikes!): ~213
= 570 calories.
Saturday total: ~1800 calories

Hi Kath, that pasta looks delicious! Is that one serving of the pasta?
Yup, it's on serving. I had a cup of cooked pasta, which CK said was 185 calories, plus the pesto, 2 chopped olives, and veggies and that's it! The veggies were almost no calories, pesto 100 or so, and olives another 30ish?
Gotta love it when it's filling and low calories :)
